Preperation


We all know what tomorrow is and we all know what is to come.  Sure, time with our family, but if you are cooking the meal you are probably thinking of all the time in the kitchen you are going to spend, the dishes, the "how in the WORLD am I going to prepare all this with one measly oven?".

If you are like me, you like to prepare a little a head of time and make what you can the night before so you can just pop in in the oven to cook.  And you can tackle those dishes a little early so they don't overrun your kitchen as they would if you were preparing everything all at once.   I also like to have a little snack for people to munch on while they are waiting for the main dishes. Kind of like a warm up for the tummy.  This year it's just me and hubby and our little girl, but I thought since there is a long weekend coming up and my husband is going to be here SO MUCH (come on, you know I love him) I figured, why not make something that we can have on hand for breakfast in the morning and we can heat up easy over the next few days?  So, I snatched these little muffins off Pinterest and voila! And they are oh so good!  Of course I had to try one before packing them up for the morning. They would make a great brunch item, which I plan to make another batch to take to the brunch I conveniently have on Monday!


RECIPE

  • 1 lb. hot ground pork sausage
  • 1 tsp onion powder
  • 3 cups all-purpose baking mix
  • 1 (10.75 oz) can condensed fiesta nacho cheese soup
  • 2 cups shredded Cheddar cheese
  • 3/4 cup buttermilk (water or milk will work too)


Cook sausage and onion in a large skillet over medium to med-high heat, stirring until it crumbles and no longer pink. Drain and cool. 

Preheat oven to 375. Combine sausage, baking mix, and shredded cheese in a large bowl. Make a well in the center of the mixture. Stir together the soup and buttermilk; add to sausage mixture, stirring just until dry ingredients are moistened. Spoon until lightly greased mini muffin tins, filling to tops of cups. Bake for 15-18 minutes or until lightly browned.

I'm pregnant!

I've been keeping it a secret for a little while now. We are so very excited, but also so very nervous. We went for our third ultrasound today and everything looks "excellent". That is a direct quote from our doctor! The heart rate was 185, up from 140 three weeks ago! I'm 10 weeks, so we have a little while before we find out if we are having another girl or a little boy. Since our daughter was born at 21 weeks from my lovely incompetent cervix, I just love that name, but I guess it gets the point across, I will be getting a cervical cerclage at 15 weeks. He described it like this, " Have you ever had one of this draw string purses? It's pretty much like that". HAH! Whatever as long as it holds this little baby in there! The surgery will be December 17th. I'm a litter nervous and I'm sure I'll be a lot nervous as the date gets closer, but I will do whatever it takes! Today our little baby was moving around a lot in there and was showing off ...

Hip Dysplasia

At Elliot's 3rd well baby visit her pediatrician discovered a click in her left hip.  He said that it could be nothing, but we should get it checked out and he referred us to an orthopedic surgeon at a children's hospital 3 hours away.   We had our first appointment with the orthopedic surgeon at the end of July and sure enough he diagnosed her with left hip dysplasia.  He assured us it was a common thing and can be treated.  The first step in our treatment plan was a Pavlik Harness.          This is the actual picture shown on the packaging of the harness.  Me and my husband thought "well that baby is happy, it can't be that bad"...wrong!  The nurse put it on her and she screamed her head off the whole way through!  Then they decided that one was too small and took it off and put a bigger one on her.  Oh, it was terrible she was screaming, I was crying.  The doctor and nurse kept telling me that it wasn't hurting ...

Vacation

Sorry, I haven't been udating much. We are in Florida with some friends enjoying the warmer weather. Everything is well and when we get back we have our appointment that will let s know boy or girl! I have wanted to started buying things already! I've picked out a few green and yellow things at the stores we have been arond to down here, but I end putting them back after Chris reminds me that we are so close to finding out girl or boy! lol Well, this is a really quick update and I hope to post some pictures when I get back!
